About this time of year we become addicted to strawberries. Our favorite way to enjoy them is in strawberry pie with a little bit of whipped cream. Here's the easy strawberry pie recipe I follow:
1 Reduced Fat Graham Cracker crust
1 egg white
2 pints of Strawberries, sliced
1 1/2 cup of water
2 T of corn starch
1 1/2 T of Splenda sugar blend
1 packet of sugarfree Strawberry jello
Add a small amount of water to egg white, mix and then brush on crust. Bake crust at 375 degrees for 5-10 minutes. Let crust cool. Whisk together water and corn starch in a saucepan over medium-high heat until it boils, cook for 2 minutes. Take off heat and whisk in splenda blend and jello. Add strawberries to corn starch mixture, then transfer to pie crust. Cover and let chill a minimum of 4 hours.
Weight Watchers points: 3 pts. for 1/8 of the pie (add an extra point or two for the whipped cream, depending on how generous you are).
