Peanut Butter Chocolate Chip Cookies

What do you do when the forecast predicts 10 inches of snow? You bake cookies! This time around we made Peanut Butter Chocolate Chip Cookies from the December 2008 Cooking Light. The cookies are very similar to a recipe we've tried before.

It starts off easy enough. Mix together the sugars, peanut butter and oil together in a bowl. Then in another bowl mix together the dry ingredients. Then slowly mix the wet and dry ingredients together.


Put 1 tablespoon of dough 2 inches apart on a pan and bake. Once done, cool on a wire rack.

These cookies are wonderful and have a bit of a stronger peanut butter flavor than the bars, but a less oily. They are a bit more cakey and much lighter as well. A recipe that will be made again, that's for sure.
