Black Bean Chili Dogs

Ever just want to gorge on junk food? We do, too, but we like to put our own twist on it and make it healthy at the same time. So when we were craving some fattening chili dogs, we made our own chili and used turkey hot dogs and light hot dog buns.

The chili starts off by sauteing diced celery, garlic and onion. We like a lot of veggies so there's probably a good 1 1/2 cup each of celery and onion, and three cloves of garlic. Then we added a mixture of organic, no salt added, diced tomatoes and fresh Roma tomatoes. We then mix in 1 1/2 cup pre-soaked, pre-cooked black beans, 1 cup soy crumbles and one chipotle pepper, thoroughly chopped. Once combined, we served on top of precooked hot dogs and topped with cheese. (For clarity, the post is labeled vegetarian if you want to make just the chili.)
