Sometimes dinner just needs to be easy. No recipes to follow, no complicated techniques to accomplish. That's where the Santa Fe Salad came in. My inspiration? Wishbones' new Bountifuls Simply Santa Fe salad dressing. I picked up a rotisserie chicken and frozen corn and then raided the cupboards/fridge. What was created was a salad comprised of black beans, rotisserie chicken, corn, green peppers, grape tomatoes, reduced fat cheddar, a little part-skim mozzeralla and of course, the Bountifuls dressing. It was fantastically yummy (and only 5 points for those who follow Weight Watchers).
