Dark Chocolate Cupcakes with Vanilla Buttercream Frosting

I will admit, in the past when I have made cakes or cupcakes I have always used a box cake mix. I know, shameful. Because of this I've wanted to make a cake from scratch for the longest time, and finally I've done it!

When I decided to travel down the from scratch road, I realized I needed a recipe. So I did some searching and I eventually decided on this recipe.

I first began by sifting and mixing the dry ingredients together. Then I added the milk and eggs. At this stage the recipe also says to add a 1/2 cup of oil. I chose to go the slightly healthier route and instead added an equal amount of unsweetened applesauce and then mixed well.

Finally I added the hot coffee.

At that time I was also supposed to add the vanilla, but I admittedly forgot. Whoops! Luckily the end results didn't suffer.

Once the coffee was added, the batter was especially thin, so I ended up using a ladle to get the batter into each cupcake cup. I then baked the cupcakes at 350 degrees for 22 minutes.

Once cooled, I filled each cupcake with butter cream and then top each with more butter cream. I would share that recipe, but it's a family secret. :)

Note: I've made this recipe since and have had success upping the cocoa powder to 3/4 cup and allowing the coffee to cool slightly before adding it to everything. It has made for a really rich and deep flavored chocolate cupcake.

Seems like cupcakes are the happening thing :-) I have always made cupcakes from a box too. Suddenly, photos of cupcakes and articles about cupcakes starting appearing....I felt like I was missing something, and decided it was time I made "real' cupcakes too.

OOOh. Love cupcakes. And homemade chocolate cupcakes with coffee in them are the bomb!

Were they as good as they sound?

They were (and are, since we still have some left) very good. They were quite moist and you can really get a tinge of the chocolate and coffee.
