Vegetarian Sloppy Joes

We had a pretty busy weekend recently, so we didn't really have an opportunity to sit down and plan out our meals for this week. We do that so we know what we're eating, to minimize eating-out days when we don't know what to make, and to compile a concise grocery list.

So instead of our normal routine, I just looked around in some of our food magazines and cookbooks and pulled out some recipes that we had ingredients for. This Vegetarian Sloppy Joes recipe from Healthy Cooking was one of those.
Vegetarian Sloppy Joes
1 finely chopped small onion
2 teaspoons butter
12 ounces frozen soy crumbles
1/2 teaspoon pepper
2 tablespoons all-purpose flour
8 ounces no-salt-added tomato sauce
2/3 cup ketchup
6 hamburger buns
Saute the onions in the butter until translucent. Add the soy crumbles and pepper and heat through.

Sprinkle in flour and stir until blended. Stir in tomato sauce and ketchup and bring to a boil; stir constantly. Serve after mixture has thickened.


The tomato sauce and ketchup had some nice tang to them, but the mixture could have used a bit more seasonings to introduce another flavor or two. Also, the recipe calls for using 1/2 cup of mixture per sandwich, but that was almost too much for me.
