Rotisserie Chicken Salad on Pretzel Buns


Inspiration is a fickle thing.

Sometimes it won't bonk you over the head even if you want it to. And sometimes it's just handed to you as a sample at Costco.

The latter was the case when the warehouse store had a sample of Rotisserie Chicken Salad on Pretzel Buns one weekend. We tried it and loved it; it inspired us to make our own recipe.

Soft, chewy pretzel buns. Crunch from celery and onion. Sweetness from lemon juice and mayo. And just a hint of smokiness from the rotisserie chicken.

Yep, fabulous. (And fabulously easy.)


Rotisserie Chicken Salad on Pretzel Buns

6 to 8 servings

1 rotisserie chicken
1 cup celery, diced
1/2 cup red onion, diced
6 ounces yogurt
3/4 cup mayo
1 lemon, juiced
couple of dash of hot sauce
1 teaspoon dill weed
1 1/2 teaspoons garlic salt
2 teaspoons parsley flakes

1. Tear chicken off of carcass once it has cooled. Chop into bite-sized pieces, about 1/2-inch.

2. In a large bowl, combine the chicken, celery, red onion, yogurt, mayo, lemon juice, hot sauce, dill weed, garlic salt and parsley flakes.

3. Scoop about 1/2 cup of chicken mixture onto pretzel bun.
