Cheese Tortellini with Tomatoes and Corn

Tonight we had the perfect quick meal. And that was great because Melissa went somewhere after work and I came home from work late. We were hungry and, luckily, Healthy Cooking's recipe for Cheese Tortellini with Tomatoes and Corn was just what we needed.

To start, combine the cherry or grape tomatoes, green onions, basil, Parmesan, olive oil, garlic powder and pepper in a bowl and mix.


Boil the tortellini and then add the corn. When they're done, give them a quick bath under cold water. You don't want to add the hot cooked corn and tortellini to the cool tomatoes. Then pour the tortellini and corn in with the other ingredients, stirring to combine.


The tortellini and the veggies were filling. And the ingredients worked really well together, although we found we needed a dash of salt at the end. But the juicy grape tomatoes and creamy cheese tortellini combined well with the corn, basil and other ingredients. Best of all, this is a recipe that could be done in 10 or 15 minutes if you have two people preparing it.

Love these nice, quick meals. And using fresh, seasonal ingredients doesn't hurt either!

If you haven't tried the dried tortellini from Costco, it's worth checking out. Far better than most -- with lots of cheese flavor.
