Honeycrisp Apple, Caramelized Onion and Blueberry Cheddar Pizza

Honeycrisp apples are probably our favorite apples. They're juicy and delicious. And the blueberry cheddar cheese from Brennan's Market is a complement to them as a mid-day snack. And somehow, we got around to asking ourselves how the two would taste on a pizza.

To begin, we caramelized red onions in butter and olive oil.

Then we set those aside and sauteed the apples in butter and added in lemon juice, brown sugar and cinnamon.

Then it was time to prepare the pizza. We brushed the dough with olive oil, added the caramelized onions, apples and blueberry cheddar. The 10 minutes that pizza spent in the 500-degree oven was like an eternity. But, lo, eventually it came out and it was delicious. (Close up below.)

The pizza was great and savory. The brown sugar added in to the apples was enough to give them flavor, but not enough to make the pizza taste like a dessert. We thought we could have added just a little bit more cheese, however, to make a more consistent bite. Still, this was a wonderfully delicious pie!

Honeycrisp Apple, Caramelized Onion and Blueberry Cheddar Pizza

1 red onion, halved and sliced
1 tablespoon butter
1 tablespoon olive oil
1 medium or large honeycrisp apple, sliced
1/2 lemon, juiced
2 tablespoons butter
1 teaspoon brown sugar
1/4 teaspoon cinnamon
3 to 4 ounces blueberry cheddar

1. Caramelize red onions in butter and olive oil.
2. Chop apples into fourths, then each fourth into slices, then each slice in half.
3. Saute the apples in butter and added in lemon juice, brown sugar and cinnamon.
4. Lightly coat rolled-out dough in olive oil. Layer on caramelized onions, apples and blueberry cheddar.
5. Bake at 500 degrees for 10 minutes.
