A while ago (OK, a long time ago), we opened up our copy of "Cook's Illustrated Best Light Recipes" and opted to try out a chickpea-centric dish, Greek-Style Chickpea Salad.
The hearty, filling dish calls for chickpeas (obviously), red onion, cucumber, mint, feta, parsley, lemon juice, Kalamata olives, Dijon mustard, olive oil, garlic and black pepper. It's an easy and quick toss-and-serve dinner, and it's worth it.
