Marinated Chicken Fajitas

If you're like us, you're always on the lookout for simple meals that are easy on the preparation, in time and work. But you want those meals to have flavor, too.

So we decided to do a quick Marinated Chicken Fajitas recently. We marinated the chicken overnight and then cut it up and cooked it the next day. Preparing ahead of time can be a great way to go easy on the cooking time.


The marinade was simple: lime juice, cumin, chili powder and salt. Then we cooked the sliced green peppers, red peppers and red onions and topped with cheddar cheese and sour cream.
