White Chicken Chili

For Christmas, one of the presents Melissa and I received is "The Best of America's Test Kitchen 2011." As ATK lovers, we cherish the ability to peruse through meticulously crafted and fine-tuned recipes.

One recipe that really popped out at us was the one for White Chicken Chili. Best of all, it is a slow cooker recipe, meaning we could use a kitchen appliance we rarely rely on.


The recipe was pretty simple, cooking on low for 4 hours. The chicken and beans were flavorful, although some of the beans in our chili were a little on the overcooked side. (We have a slow cooker with just three settings -- high, low and warm -- so this could be corrected with an upgrade.)

Regardless, the taste was great, creamy and filling, and we'd definitely try this again.
