Grilled Zucchini and Caprese Sandwiches

It's been a while since we hit up the pages of Cooking Light for some weeknight supper loving, but that's just what we did early this week with Grilled Zucchini and Caprese Sandwiches.


I was unsure how it would turn out, but it turned out fabulous. (Thanks, in no small part, to the freshness of the ingredients we used: basil picked that day from our container, zucchini picked a couple of days before from our garden.) And the ciabatta loaf was a nice touch, soaking up the wonderful balsamic vinegar flavor.
