Makeover Nacho Beef Bake

Sometimes casseroles can be, well, less than stellar. But since we have a tendency to enjoy Southwestern flavors, we decided to give the Makeover Nacho Beef Bake from Healthy Cooking a go.

One thing that made us a bit leery, beside the fact that it is a casserole, is that it calls for nacho tortilla chips -- and you bake them. Different, but surely interesting.

To start, preheat the oven to 375 degrees. Cook beef in a skillet and add the black beans, water and taco seasoning. Cook and stir for 4 to 5 minutes.


Meanwhile, unroll the crescent dough for the bake. Press it into a 9-by-13-inch backing pan. Spoon the beef and beans mixture over and spread evenly. Then coat with sour cream and sprinkle with cheese. Finally, layer the crushed baked nacho tortilla chips on top.


Bake uncovered for 18 to 22 minutes.


Top with lettuce and tomatoes.


Altogether, the recipe wasn't half bad. But we thought there were some peculiar decisions. The nacho chips did provide a nice contrast, but were soggy on reheatings. In addition, the crescent roll dough could have been omitted and something substituted in its place. It really didn't add much and wasn't as palatable on reheatings.

I have a similar recipe that uses chicken breasts. Really good! I'll make it for you guys sometime.

Those are really weird combination's. Reminds me of a taco pizza almost.
