Frittata with Smoked Cheese and Canadian Bacon


It's been a while since we had a simple breakfast for dinner. So when Melissa wandered upon Cooking Light's Frittata with Smoked Cheese and Canadian Bacon recipe, we decided it was time.

Cook the hash browns, onion and Canadian bacon over medium-high heat. Remove and then whisk together salt, hot sauce, pepper, eggs and egg whites. Add the hash brown mixture, cheese and green onions.

Then cook the eggs, lifting and tilting the skillet to allow more of the eggs to cook. Finish under a broiler until brown.

OK -- this is totally perfect. Smoked cheese, plenty of protein -- and it takes less than an hour to prepare for dinner. Love it. How were those leftovers you had for luncH?

I'm sure Dan will agree, that the leftovers were fantastic. Equal to, if not, slightly better than the original meal. This frittata was just yummy all around.

Yeah, the leftovers were very good. It's always a wonder if some recipes will reheat well in the microwave; this one did.
