Simple JenEhr Smashed Potatoes


After our haul at the Milwaukee County Winter Farmers' Market, we had to decide: What do we do with this food?

Well, for the potatoes we bought from JenEhr Family Farm (you can follow them on Twitter and Facebook, too), we wanted them to be showcased, not a minor component in a dish, so we thought simple smashed potatoes would be best.

It was an easy side dish that accompanied a marinated pork loin, and we did it by boiling them, lightly smashing them and then baking them with chives, salt, pepper and olive oil.


Simple JenEhr Smashed Potatoes
2 pounds potatoes
4 tablespoons olive oil, divided
chives
salt
pepper

1. Clean potatoes and boil in water until fork tender; water level should be at least 1 inch above potatoes.

2. After removing potatoes, smash until potato starts to break, but still holds together.

3. Sprinkle 3 tablespoons of olive oil over foil-lined baking sheet so potatoes do not stick. Add potatoes and season to taste with chives, salt, pepper and remaining olive oil (or anything else you want).

4. Bake until golden brown. (Ours were small potatoes, so they took about 20 to 30 minutes.)

I was hoping to get a hold of some of these potatoes for our soup this weekend. They've been SO FABULOUS. Unfortunately, they were all out at the market.
