As is the case every year, Thanksgiving gave us many leftovers. Among them -- turkey, of course, was the star -- were the cranberry sauces.
But what could we do with leftover cranberry sauce? (The obvious answer was chosen as well. Eating it straight.)
Thankfully, Melissa found a Cooking Light recipe that combined our love of southwestern flavor and Thanksgiving leftovers: Jack Quesadillas with Cranberry Sauce.
I thought it was really good, but Melissa thought it was just OK. I thought the blend of sweet and spicy from the cranberry salsa contrasted well with the cheese and turkey. But Melissa thought it was a bit too sweet for her. A good recipe, if not a divisive one.
