"Cooking Light" magazine delivered again when we saw the recipe for Cheesy Meatloaf Minis.
(There were a lot of yummy-looking recipes in the January/February 2011 issue. It helps that we have been a bit uninspired in the kitchen, preferring recently to rely upon recipes than to create our own.)
The meatloaf was delicious, with melted cheese chunks and a perfect hint of sweet (even after messing up and adding too much ketchup) and tangy. These mini loafs were also the perfect portion size.
We loved these mini loaves so much that we made them again recently. Verdict? Yep, still awesome and delicious. And they were better the second time around with some awesome JenEhr mashed potatoes with butter, cheddar, horseradish, dijon and more.
