Breakfast Pizza


When the colder weather hits, we turn to two things: Pizza and soup. We make soup as often as possible (nearly weekly so far this fall) and pizza every weekend.

Our Saturday night and Sunday lunch pizzas are great, and they're usually green peppers, mushrooms, onions with some seasonings.

But then there's times when we get tired of that mainstay pizza and crave something different. It was on a recent weekend when Melissa came up with an idea for breakfast pizza. The crust comes from the same recipe we use every time, and the hash browns we used were frozen because that is what we had had in our freezer for months.

The result was a creamy pizza with crunch from the bacon and crust, flavor from the green onions and cheddar and heartiness from the eggs and hash browns. This pizza would make a great party appetizer, too.

Breakfast Pizza
2 servings

4 ounces cream cheese, warmed
2 eggs, scrambled & pre- cooked
salt to taste
pepper to taste
1 cup frozen hash browns
3 slices bacon, chopped
1 cup cheddar cheese
3 green onions, sliced

1. Preheat oven to 500 degrees. Cook eggs in skillet; salt and pepper to taste and set aside.

2. Spread warmed cream cheese over pizza crust. Top with eggs, hash browns, bacon, cheddar and green onions.

3. Bake for 10 minutes.
