Lime Bars

Melissa was in the mood to bake lately, so she went on the hunt for something to make.

Her search ended, as it usually does, with America's Test Kitchen. This time, with its Best Key Lime Bars recipe (link leads to premium content). Bonus: The recipe is simple, just a few steps, but we used regular limes instead of Key limes.


The crust is baked after being made of crushed animal cookies, a throwback to our childhoods. It also includes a bit of brown sugar, salt and butter.

For the filling, combine cream cheese, grated lime zest, salt, sweetened condensed milk, egg yolk and lime juice in a mixer. Then pour it over the crust and bake; refrigerate after baking for a couple of hours.

We loved these bars so much that Melissa made them 3 or 4 times. The tart lime was perfect and the animal cookie crust, a perfect blend of salt and sweet, cut through that tartness.
