Dijon-Crusted Chicken Breasts

We found this recipe from Taste of Home's Healthy Cooking magazine. The prep for this is pretty easy, which is good. Start with bread crumbs, grated Parmesan cheese, Italian seasoning, dried thyme, salt and pepper.


Then you need to take the chicken breasts and rub them with Dijon mustard. From there, take the breasts and roll them in the seasoning mixture, making sure you coat as much of the chicken as possible. Cook the chicken in a large skillet with oil and margarine over medium heat for five to six minutes per side.



Let rest for a bit and you have some delicious Dijon-Crusted Chicken Breasts. They are moist and have a great bite with the outer crispiness.
