Chicken and Summer Vegetable Tostadas

Cooking Light comes to the rescue again.

While the broiler is preheating, sprinkle a mixture of cumin, salt and black pepper over chicken; cook. Add red onions, corn, and zucchini and saute. When chicken is done, stir in salsa and cilantro.

Then take two tortillas at a time and cook in the broiler until they are slightly brown. Then take out and spoon 3/4 cup of the sauteed mixture; add 1/4 cup of Monterey Jack cheese. Cook in the broiler for about 2 minutes.


When it's done, take it out and sprinkle some more cilantro on top.

The flavors melted wonderfully. There was a bit of a contrast between the tender chicken, the flaky tortilla, the melted cheese and the zucchini, which still had a bit of a good crunch to it.
