Sweet Apple Chicken Sausage Couscous

Recently I had an idea to combine a few ingredients we had lying in our kitchen. Melissa took off from that idea and created this recipe, which combined couscous and some sweet apple sausages that we had in our freezer.
Sweet Apple Chicken Sausage Couscous
2 sweet apple chicken sausages (or other sweet sausage)
1 chopped red bell pepper
1 chopped medium onion
2 cloves garlic
1 tablespoon extra-virgin olive oil
2 cups couscous
1 tablespoon cinnamon
2 tablespoons lemon juice
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon pepper
First cook the couscous according to the box directions.

Then cut the sausages on a bias and saute them and the red pepper, onion and garlic in olive oil in a skillet over medium heat.


Then add the couscous, cinnamon, nutmeg, salt and pepper.


Mix well for a couple of minutes and then serve.


The cinnamon and nutmeg gave this dish a nice sweet kick. And it was a great way for us to get rid of some ingredients that were lying in our home for quite some time.
