Black Bean Burgers with Tangy Citrus Mayo

We absolutely love black beans. They're awesome. And Melissa wanted to take a stab at creating her own. So she did: Black Bean Burgers with Tangy Citrus Mayo.

A couple of notes: We always use rehydrated black beans, except we didn't plan out enough in advance and found we didn't have enough beans. So we used canned this time. Because of that, when we added salt, the amount was negligible. If you used rehydrated beans, however, you'll need more salt.

Also, Melissa will be working to tweak the binding agents as a couple of the burgers were a little bit loose and one didn't really bind well.



Black Bean Burgers with Tangy Citrus Mayo
4 servings
Burgers:
2 cans black beans, mashed
1/2 cup panko crumbs
2 green onions, chopped
1 egg
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon black pepper
salt
hot sauce to taste
1 tablepoon lime juice
lime zest
ketchup
1 tablespoon olive oil

Mayo:
1/2 cup mayo
1/2 cup sour cream
2 green onions, chopped
1 1/2 tablespoon orange juice concentrate
1/2 teaspoon chilil powder
1/2 teaspoon cumin
1 teaspoon lime juice
lime zest
black pepper
salt

1. Combine burger ingredients; mash together and form into four patties.

2. Combine mayo ingredients and set aside.

3. Cook the black bean burger patties in olive oil. Spread mayo mixture on top and bottom of hamburger bun.

Those burgers sound so good! Oddly, I don't like rehydrated black beans; only the canned variety. Probably because of all the added sodium!
