Grilled Spicy Lime Chicken with Black Bean Salad

We've talked and written about our love for America's Test Kitchen, Cook's Illustrated and Christopher Kimball in several blog posts. And we always love to make recipes from their various books and magazines that we buy. You can find the recipe in The Best Simple Recipes book.

First make the marinade with cilantro, lime juice, olive oil, chipotle, honey, garlic, cumin, salt and pepper. Toss the chicken in the marinade and let it sit in the fridge for a few minutes.

Then combine the black beans, green onions, red peppers and avocado with other herbs and seasonings. Grill the chicken and then top with the black bean mixture. It was good, juicy chicken, bold lime flavors, crunchy red pepper and creamy avocado. Definitely a great balanced meal for texture and flavor.

There was just one thing wrong about the dinner, though: The color selection of the plate. It didn't photograph well without more contrast.

Our favorite marinades for chicken tend to include chipotle & lime -- so I'll stand behind you on this one. Bet this would make a lovely addition to a summer taco salad!
