Black Bean Taquitos

Our foodie friends over at Haute Apple Pie blogged recently about taquitos. We had tried out that recipe from Our Best Bites that same week and thought it was good, but we wanted to take it and make it ours.

The easiest way to do that, we thought, was to use one of our favorite ingredients: black beans. So we did.


Black Bean Taquitos
(adapted from Our Best Bites)

3 15-ounce cans of black beans, drained and rinsed
1 medium red onion, chopped
1/2 teaspoon oregano
1/2 tablespoon cumin
1/2 tablespoon chili powder
1/4 cup green salsa
2 cloves garlic
1 tablespoon cilantro
1 1/2 cups frozen corn
cheddar
pepperjack
cream cheese
lime juice
30 to 40 corn or flour tortillas
sour cream to taste

1. Heat oven to 425 degrees. Mash black beans in a bowl until at least half of them are mashed well.

2. Combine red onion, oregano, cumin, chili powder, green salsa, garlic, cilantro, corn, cheddar, pepperjack, cream cheese and lime juice with the black beans.

3. Scoop about 1/4 cup of the mixture about 1 inch from the sides of the tortilla. Even into a straight line and then fold tortilla around mixture, making sure taquito stays tight. Place fold down on a baking sheet.

4. Place taquitos in the oven for 15 to 20 minutes. Serve with sour cream, guacamole or other accompaniments.
