Corn Cakes with Tomato-Avocado Relish

During a meal planning session recently, Melisssa suggested we make the Corn Cakes with Tomato-Avocado Relish recipe she found from Annie's Eats via Pinterest. I was all for that.

It was a no brainer since I'm a sucker for pretty much anything avocado and we were able to snag a bunch of corn from the West Allis Farmers Market.

The corn cakes were very good, a strong corn flavor supplemented by creamy avocado, fresh diced tomatoes and tangy ranch dressing.
