Summer Tomato Pie

About a month ago, our garden tomatoes were starting to reach full ripeness. And as anyone who has grown tomatoes knows, once the first ones start, it's not too long until you are up to your elbows in garden-grown tomatoes.

Last summer, we made a very yummy Tomato Tart, but Melissa had found a recipe she wanted to try. It was from Cook's Country, and it was for Summer Tomato Pie.

The dough we used also was an America's Test Kitchen recipe and it was delicious. The freshness of our Burpee Big Girl tomatoes paired with the Arthur Bay Cheese Co. cheddar cheese was amazing. And the crust might have been the best part.

In fact, we loved the pie so much we made it twice within a couple of weeks.
